Smelling is a quite "straightforward" sense, as we are actually inhaling tiny particles of the substance smelled. They hit the olfactory epithelium, the mucous membrane in the nasal cavity, containing millions of olfactory receptors. These sensors interact with the particles and send signals to the olfactory nerve, which sends them to the brain.
